The sauvignon grapes are picked and brought to the winery from four to ten in the morning. They are slightly cold macerated before being pressed. The musts are kept cold for 48 hours. Fermentation takes place in temperature controlled tanks for 20 days at 14°C.

The grapes are picked at low temperatures (night harvesting). They are sorted and pressed. The musts are cold racked for 48 hours, before fermentation which lasts 20 days at a maximum temperature of 15°.

Le vin de pays d'Hauterive is an innovative product. The grapes are vinified "on the fruit" producing pleasant, easy to drink wines. This wine goes well with light dishes such as pizzas, salads, quiches and grilled meat. It is the ideal companion for your meals.

This Chardonnay, Vins de pays d'Oc is made in Escales and Tourouzelle from only the finest selected plots. A slightly greenish, yellow color with pretty light tints. This Chardonnay has discreet notes of white fruit. On the palate it is lively, fluid and crisp with pleasant fruity flavors giving a delicate, fresh overall taste. Ideal served with appetizers.
Serve at around 13°C.

Grapes are fermented at 24-26°C for eight days. The press wine is not incorporated to conserve the maximum fruit aroma. These wines are sold the year after the harvest. To get the most out of their fruity potential, they are best drunk within three years.

This carefully crafted wine is dominated by Grenache, giving it suppleness, along with Syrah and Carignan, the traditional grape variety of our terroirs.
An intense red with ruby lights and aromas of ripe, dark fruit. A typical, supple palate, fresh and balanced; the fruity aromas dominate (cherry, blackberry) with polished tannins. Perfect to discover the AOC Languedoc appellation.

Traditional vinification with 25 days in the tank at 24° and daily pumping over with a regular addition of oxygen. Wine is stocked after the five month racking and then the first bottling.

The grapes used to make Sainte Catherine are harvested in Escales and Tourouzelle. This partially fermented grape must is the product of our desire to bring together our two villages, which share the same passion for authentic, terroir products. |

The Grenache, Terret, and Muscat grapes used to make this product are harvested on Saint Catherine's day. Grapes are manually harvested and can contain up to 340 grams of sugar per liter. Juice is then extracted using a pneumatic press. The must is cold decanted at around 3°.
|

|
The racked juice is put in new barrels for fermentation, which lasts over one month. The partially fermented must (15.5° of alcohol and 85 g of residual sugar) will be racked several times. The must will be aged for four months in tanks and will be bottled in April allowing its aromas to fully develop. |
