The grapes used to make Sainte Catherine are harvested in  Escales and Tourouzelle. This partially fermented grape must is the product of our desire to bring together our two villages, which share the same passion for authentic, terroir products.

The Grenache, Terret, and Muscat  grapes used to make this product are harvested on Saint Catherine's day. Grapes are manually harvested and can contain up to 340 grams of sugar per liter. Juice is then extracted using a pneumatic press. The must is cold decanted at around 3°. The racked juice is put in new barrels for fermentation, which lasts over one month. The partially fermented must (15.5° of alcohol and 85 g of residual sugar) will be racked several times.  The must will be aged for four months in tanks and will be bottled in April allowing its aromas to fully develop.
